As of September 1, you can once again kick off your concert evening with a delicious bite to eat in the former AB Café. That’s the day that ‘Mabelle’ opens its doors, a pop-up restaurant with exclusive and sustainable dishes.
The menu will be compiled by 6 Brussels restaurants. Mabelle wants to combine the best of the Zinnekestad under one roof. They challenged a group of local chefs to each come up with a sustainable dish that will be served exclusively at Mabelle. On the menu: a burger from Kitsune, a ‘Cuban Sandwich’ from Frank, shakshuka from Pois Chiche, tacos from Waco Taco, veggie spaghetti from Monk and a curry from Mission Masala.
Mabelle really wants to work as Brussels and as sustainable as possible. “Our dishes are mainly plant-based and are prepared with local products. Nothing goes to waste. Leftovers are reprocessed by farms in the Brussels area and our products are picked up by bicycle. We even try to apply the same principles in the interior. So, for example, our counter is covered by clay that was recuperated from various building sites around Brussels” says Quinten Decleyn of Mabelle.
So you can expect a beautifully presented plates with the best of what Brussels has to offer.
